About

Vegan Ramen UZU Tokyo is the Tokyo outpost of a Kyoto ramen shop that holds both a Michelin Bib Gourmand (four consecutive years) and a Michelin Green Star. Located inside teamLab Planets in Toyosu, it is open to the public without a museum ticket. The signature miso ramen is built on a kombu and shiitake dashi base blended with oat milk, layered with white sesame paste and ginger garlic aromatics, and served with homemade medium thick noodles made from Hokkaido wheat and pesticide free whole grain flour. Toppings include oven roasted tomatoes, grilled maitake mushrooms, and yuzu peel. All items on the menu are fully vegan.
