About
Chabuzen is a tiny, owner operated vegan ramen shop tucked into the residential backstreets of Setagaya, about a ten minute walk from Shimokitazawa Station. The full name is Food Therapy Diner Chabuzen, and the cooking is grounded in yakuzen, the Japanese practice of food as medicine. Owner Daiji Takada makes everything from scratch using organic, additive free ingredients. The menu is entirely vegan, halal certified, and focused on ramen and curry, with a handful of sides like gyoza and soy karaage. Takada originally ran the place as a non vegan organic shop before converting the menu fully to plant based after growing demand from international visitors.
Good to know
- Menu includes the Rich Yeast Ramen Dragon (a vegan ramen inspired by Kumamoto pork bone ramen, using rice koji for umami), the Kuro (black sesame tantanmen), the Nirvana (curry ramen), and a garlic variation. Vegan chashu can be added to any bowl.
- Ramen runs around ¥1,500.
- The owner, Daiji Takada, runs the kitchen solo; service can be slow, with everything made to order.
- The seating mix of counter spots and a small tatami area can feel cramped, especially the tatami for taller guests.
- Located in Setagaya's Shimokitazawa area, about 10 minutes walk from Shimokitazawa Station. Opened in 2008.
- Approximately 80% of the clientele is non-Japanese. Closed Tuesdays.
